  •  ふっくらとしてレモンイエローの黄身。そして見事なハウユニットを形成した弾力ある白身。これはストレスのない環境でいい餌を食べて育っている証拠という。黄身に色を付けるための成分や合成飼料などは一切与えず、道内で取れたものを独自配合する飼料と、緑のクローバーが鶏の食事。例えば醤油の代わりに塩昆布などで、卵かけご飯で食べると味がよくわかります。



     卵かけご飯、卵焼き、目玉焼き、茶碗蒸しに親子丼など、料理のレパートリーが幅広く、日本の食卓に欠かせない存在の卵。栄養満点な完全食なうえ、戦後から今日までの70数年間、価格がほぼ変わらない。国民一人当たりの年間鶏卵消費量は333個で、メキシコに次いで2位を誇る(IEC=国際鶏卵委員会・2017年次統計)。
     北海道の広大な石狩平野に位置し、札幌と千歳のほぼ中間にあたる長沼町は道内でも有数の農業地帯だ。都市近郊の立地条件を生かし、グリーン・ツーリズム構造改革特区の認定を受けている。長沼町で農家民泊も行なう卵ラン農場ムラタの村田博美(ひろよし)・由香里夫妻は、約1600羽の鶏を平飼いで健康的に育てている。北海道夕張郡長沼町。サラブレッドとしての馬や牛の牧場の多い地域にその卵ラン農場ムラタ鶏舎はある。鶏舎の中は乾燥し、素手で地面に触っても汚れがつかない。そしてほとんど匂いもなく、元気に鶏やひよこが自由に動き回っている。これは鶏のために開発した独自の環境だ。
     レモンイエローの理由は厳選した餌にある。道産小麦と有機の生米ぬかを主体に、魚粉や牡蠣貝殻、きなこなどをブレンドした自家配合の餌にこだわり、輸入とうもろこしや抗生剤、添加物、着色料などの薬剤は使用していない。その品質は、北海道洞爺湖サミットで各国首脳に提供されたほど。色からは想像できない濃厚な黄身の味が口を包み、白身の弾力は卵の生命力を感じさせてくれる。

      ひよこをどう育てるかも大切な仕事だ。養鶏所の多くはリスクを回避するため、ある程度育った雛を仕入れるが、卵ラン農場ムラタでは生まれたてのひよこを仕入れて育てる。2月は200羽、5月まで400羽ずつ増やす。生まれて3日ほどは腸を丈夫にするために玄米を直撒きして食べさせ、後で人工ミルクのような雛の餌を与る。2・3月は緑がないので、雪の下から持ってきた笹の葉っぱを、春から晩秋はクローバーを食べさせる。毎日の緑の時間は貴重な思いやりの時間なのだ。 成長に合わせ、箱の囲いを開いたり、止まり木を用意したり、餌箱も3段階ぐらい変える。雛は次第に冒険して危険な目にもあうが、成長を見守るのが楽しいと話す。「雛が元気に育ち、自然の摂理とはいえ順番に卵を産んでくれるのはすごいことです」と由香里さんは話す。

    生まれたてのひよこを大切に育てる

     隣町の孵卵場で午前中に生まれたひよこを午後に取りに行き、育てています。昔は誰でも生まれてすぐ引き取りましたが、いまはいろいろな成長段階のひよこを専門業者が扱っていて、値段は高くてもあと1週間か10日で卵を産む鶏を買うという話を最近はよく聞くようになりました。僕らは将来的にも一切薬を使いませんから、工夫をしながら丈夫なひよこに育てていかないといけません。
     ヨーロッパで品種改良されたボリスブラウンという鶏で、羽毛が赤いのはメス、黄色いひよこはオスで白くなります。雛は普通、35〜39度くらいの温度で管理し、生育に従って徐々に温度を下げなさいと本には書いてありますが、うちでは温度計を見たことがありません。鋸屑と米ぬかの自然発酵の床暖を準備して、穏やかにひよこを守ります。少し大きくなったら、固まって圧死しないようすのこを下に敷きます。鶏たちは最初はいやかもしれませんが、仕方なく乗るうちに癖がつきます。
     密飼いは湿気も出て病気の元です。鶏舎の中は、鶏たちがストレスをためずにのびのびと動き回れるよう、一坪当たり10~12羽くらいの薄飼いで開放しています。乾燥させれば臭いもありません。走り回ったら内臓も足も丈夫になるでしょう。そうやって育てて初めて薬を使わなくてもいいような鶏になります。生き残るには試練も必要です。

    鶏舎の床を清潔に保つ工夫

     北海道で平飼い養鶏をする多くは小麦を餌にして、ポストハーベストで薬を使う輸入とうもろこしを使いません。地元の飼料米も手に入ります。着色料を使わないから卵の色は薄い。おいしくするための餌配合を自分なりに工夫するので安全で、食べたときの甘さなど味が全然違うといわれます。
     鶏の病気を防ぐには乾燥した状態で育てる必要があるので、藁を敷いています。よい状態をキープするために朝夕、麦をばら撒きます。鶏が麦を探して足で藁床をかき回すから、足回りも床もフンでべたつかず、床がドライになります。足の汚れをきれいにして巣箱に上がっていきますから、卵も汚れません。卵の表面には雑菌が入らないように保護膜がついていて、それを洗って落としてしまうと日持ちが悪くなります。だから、卵をできるだけ汚さずに産卵させることが理想なのです。
     秋を迎える頃に産卵デビューし、1日に1400個ぐらい産みます。3〜6月は鶏にとって条件がいいから大量に産みますが、北海道といえども夏は気温が高くなり、落ちてきます。年間を通して卵の数を一定に保っておくよう心がけています。  

    野菜ではなく鶏を選んで

     札幌近郊の大規模な平飼い養鶏ですから、札幌の有名ホテルやマスコミに影響力のあるシェフがうちの卵を使ってくださった関係で、営業に苦労したことはありません。2008年の北海道洞爺湖サミットの食材にと紹介もしてくださいました。
     新規就農で30年、振り返ってみるといくらかでも鶏を置いていれば残っていけると感じます。僕自身も最初は有機野菜をやってみたけど、北海道は何か月か畑が動かない時期があり、1年分を稼ぐのに苦労します。鶏は日々のお金はそんなに大きくありませんが、1年中動きます。ただし、1年365日、鶏たちの健康管理に気を遣い、病気を予防し、よりよい環境づくりに気が抜けません。
     ここまでなんとかやってこれたのは、嫁さんのおかげです。ひよこを育てるのは彼女の担当で、僕は卵を集める仕事という風に分業しています。雛が元気にちゃんと育ってこそ、しっかりした卵ができます。時間を惜しまずに、ひよこの世話をすることは、基本中の基本です。僕たちは薬を使わないから、毎日が大変です。手を抜いても鶏は育ちます。好きじゃないと、ここまでこだわれません。やり続けるのは困難だけど大事なことです。

In the area where there are many horses and cattle ranches as Thoroughbreds, there is Murata Poultry Farm. The poultry house is dry and does not get dirty even if you touch the ground with your bare hands. And there is almost no smell, and chickens and chicks move freely. This is a unique environment developed for chickens.
    And when I broke this egg for the first time, I was really surprised that the yolk was lemon yellow.The reason for this is that Hiromi Murata, a representative of egg ran farm Murata, says that it is carefully selected food.
