  •  師匠の卵ラン農場ムラタの村田さんの卵同様、美しいレモンイエローの黄身。師匠の教えを守り、まるで人を大切にするように、ストレスのない環境といい餌で育てている。黄身に色を付けるための成分や合成飼料などは一切与えず、道内で取れたものを独自配合する飼料が鶏の食事だ。将来は卵だけではなく、廃鶏を利用した加工品にも取り組みたいという。



     卵かけご飯、卵焼き、目玉焼き、茶碗蒸しに親子丼など、料理のレパートリーが幅広く、日本の食卓に欠かせない存在の卵。栄養満点な完全食なうえ、戦後から今日までの70数年間、価格がほぼ変わらない。国民一人当たりの年間鶏卵消費量は333個で、メキシコに次いで2位を誇る(IEC=国際鶏卵委員会・2017年次統計)。
     北海道の広大な石狩平野に位置し、札幌と千歳のほぼ中間にあたる長沼町は道内でも有数の農業地帯だ。都市近郊の立地条件を生かし、グリーン・ツーリズム構造改革特区の認定を受けている。ファームモチツモタレツは卵ラン農場ムラタで2年修行をした高井一輝さんが独立してつくった農園。長沼町スキー場の横に土地を借り、夫婦で新たに養鶏を始めた。現在は400羽だが4年後には1000羽の鶏を育てたいという。鶏舎の中は乾燥し、素手で地面に触っても汚れがつかない。そしてほとんど匂いもない。元気に鶏が自由に動き回り砂浴びをしている。師匠の村田さんに習った環境を自分なりに進化させ、より鶏に良い条件をと開発した独自の環境だ。
     レモンイエローの理由は厳選した餌。道産小麦と有機の生米ぬかを主体に、魚粉や牡蠣貝殻、きなこなどをブレンドした自家配合の餌にこだわり、輸入とうもろこしや抗生剤、添加物、着色料などの薬剤は使用していない。その品質は、北海道洞爺湖サミットで各国首脳に提供された卵ラン農場ムラタの卵と遜色ない。色からは想像できない濃厚な黄身の味が口を包み、白身の弾力は卵の生命力を感じさせてくれる。

     

    ファームモチツモタレツとは

    横浜から北海道へ。そして養鶏家として独立

     高井一輝さんの故郷は神奈川県の横浜。2011年3月11日の東日本大震災をきっかけに北海道に移住。最初はサラリーマンをやっていたが、このままでは地元でやってきたことと同じだということで「農業」を目指ようになった。そして長沼での農業体験中に師匠となる卵ラン農場ムラタの村田さんと出会う。鶏やひよこの世話を体験し、徐々に養鶏という仕事に惹かれていった。その後、養鶏と野菜づくりを両立させる千歳の農家に修業に行くが、どうしても養鶏一本でやりたいとの思いで村田さんに弟子入り。2年間、村田さんに付いて鶏舎や餌、環境のことなどをみっちり学んだ。独立して一番の喜びは、自分が「こうしたい」と思ったことを実践できること。実践してダメな場合はまた基本に戻ればいい。どうすれば鶏がより元気に育ち、いい卵を生んでくれるのか、それを考えて実行できるのが嬉しいと話す。

    餌へのこだわりと工夫

     鶏は本来、狭いカゴの中ではなく自然の中で自由に鶏らしく生きている。土(微生物、小石など)やミミズ、緑草をつついて体調を整えたり、砂浴びして体を綺麗にしたり日光浴したり。人間と一緒で鶏にだって自由に生活を送る権利はある。だからファームモチツモタレツはできうる限り鶏たちを「自由」をしていたいのだ。
     「北海道で平飼い養鶏をする多くは小麦を餌にして、ポストハーベストで薬を使う輸入とうもろこしを使いません。地元の飼料米も手に入ります。着色料を使わないから卵の色は薄い。おいしくするための餌配合を自分なりに工夫するので安全で、食べたときの甘さなど味が全然違うといわれます。」と師匠の村田さんの基本を守り、餌を考える。北海道長沼町近郊の穀物や米麦をメインにした、すりたての新鮮な生米ぬか。人がそのまま食べられるほど良質な道産大豆きな粉。オホーツク海側の工場で加工された有機100%防腐剤無添加のふりかけのような魚粉。友人の麹屋さんがつくる道産米の特級米麹。ワインぶどうの搾りかすを嫌気発酵させたサイレージやノルウェーの海藻粉末。アミノ酸補給の為の酒粕、友人たち農家の採れたて規格外野菜、果物。畑のビタミンたっぷり緑草、果てはニンニク粉末、一味唐辛子、エキストラバージンオリーブオイル等。季節によって多少変動はするが、鶏の健康を考えて、かなり手間暇かけた自家配合の餌を与えているのだという。

    自然に近い環境を整えて

     養鶏は一羽あたりのスペースが重要で、鶏の健康と空気をきれいに保つために、天井が高く比較的大きな鶏舎をつくったことで、鶏舎内を広く清潔に保てるようにした。自分より強いものが多いと餌を食べに行けない鶏もいるので、なるべく均等に食べられるように餌場も工夫している。水は真冬でも凍らないようにして、夜も常に水を飲めるようにしている。水を常に飲まないと途端に卵を産まなくなるためだ。鶏の病気を防ぐには乾燥した状態で育てる必要があるので、藁を敷く。よい状態をキープするために朝夕、麦をばら撒きをするのは基本中の基本だ。鶏が麦を探して足で藁床をかき回すから、足回りも床もフンでべたつかず、床がドライになる。
    モチツモタレツの鶏たちは、生まれたてのヒヨコから近郊の新鮮で安全な素材を中心としたご飯でゆっくりと健やかに育つ。そのため、通常は卵を産むまでに打たなければならない、多数のワクチン抗生物質などは使用していないのだ。安心安全で、そして何より「おいしい」を一番に。北の大地、北海道の豊かな美しくも厳しい大自然の中で育った鶏たちの命の結晶がモチツモタレツの自然卵。これが、本当の卵なのだと、園主の高井は鶏を抱きかかえた。

     The reason for lemon yellow is carefully selected bait.     From Yokohama to Hokkaido. And independent as a chicken farmer

     Kazuki Takai's hometown is Yokohama, Kanagawa Prefecture. Moved to Hokkaido in the wake of the Great East Japan Earthquake on March 11, 2011. At first he was working as a salaried worker, but now he was aiming for "agriculture" because it is the same as what he did locally. During a farming experience in Naganuma, he meets Murata-san, a teacher of egg orchid farm Murata. he experienced taking care of chickens and chicks, and gradually became attracted to the job of poultry raising. After that, he went to train a Chitose farmer who can balance chicken production and vegetable production, but joined Murata with a disciple because he wanted to do it with just one chicken. For two years, he learned about Mr. Murata about chicken house, feeding, environment and so on. his greatest pleasure independently is being able to practice what I wanted to do. If it doesn't work, he can go back to basics. He says he's glad he can think about how chickens can grow up and produce good eggs.

    Commitment to food and ingenuity

     Chicken naturally lives like a chicken freely in nature, not in a narrow basket.
